Mustard chicken stuffed with bacon and thyme

The combination of mustard, bacon, and thyme is delicious. The mustard adds a tangy flavor to the chicken, the bacon adds a smoky and savory flavor, and the thyme adds a fresh and herbaceous flavor.

The dish is made in one pan, and it only takes a few minutes to prepare.

TIPS

You can replace white wine with a mix of 1 dl (1/2 cup) water and 1 teaspoon white wine vinegar

INGREDIENTS

2 tablespoons oil

450 g (1 pound) boneless, skinless chicken breasts

 

Filling:

1 onion

3 garlic cloves

140 g (5 ounces) diced bacon

1 tablespoon fresh thyme leaves

salt and peper

 

Mustard sauce

1 dl (1/2 cup) dry white wine

1 dl (1/2 cup)  chicken broth

1 dl (1/2 cup) heavy cream

1/2 dl (1/4 cup) Dijon mustard

1 tablespoon whole grain mustard

1 tablespoon dried thyme

1/2 teaspoon salt

1/2 teaspoon black pepper

RECIPE

  1. Chop 1 onion

  2. Chop 3 garlic cloves

  3. Cook onion and garlic in oil over medium heat for 2-3 minutes

  4. Add 140 g (5 ounces) diced bacon and cook for an additional 3-4 minutes

  5. Turn off the heat and season with salt and pepper

  6. Add 1 tablespoon fresh thyme leaves

  7. Cut a little pocket in the chicken breasts

  8. Stuff the chicken breasts with filling

  9. Secure with toothpicks

  10. Add the chicken to the pan and cook in oil over medium heat for 3-4 minutes per side, remove the chicken from the pan and set aside

  11. Add 1 tablespoon dry thyme to the pan and fry for 1 minute

  12. Add 1 dl (1/2 cup) wine

  13. Add 1 dl (1/2 cup) chicken broth

  14. Add 1 dl (1/2 cup) heavy cream

  15. Add 1/2 dl Dijon mustard

  16. Add 1 tablespoon whole grain mustard

  17. Season with 1/2 teaspoon salt and 1/2 teaspoon pepper

  18. Bring the sauce to a boil, then reduce heat to medium. Add the chicken and simmer for 15 minutes

Serve chicken in mustard sauce with smashed potatoes and some fresh thyme
