INGREDIENTS

1 boneless, skinless chicken breast

1 tablespoon cooking oil

1 chicken bouillon cube

1 dl (1/2 cup) water

150 g (ca 5 ounces) cream cheese

0,5 dl (1/4 cup) chopped fresh parsley

0,5 dl (1/4 cup) chopped fresh chive

1/2 orange paprika

1/4 teaspoon black pepper

1/4 teaspoon salt

20 crostinis (homemade or from the store)

RECIPE

1. Season the chicken with salt and pepper

2. Cook the chicken in 1 tablespoon cooking oil 2-3 min per side

3. Add 1 dl (1/2 cup) water

4. Add 1 chicken bouillon cube

5. Bring to a boil

6. Lower the heat, put the lid on and let simmer for 10 min until the temperature of chicken is 75° C (165° F)

7. Let chicken cool down completely and cut into thin slices

8. Chop the slices finely

9. Put the chopped chicken into a bowl

10. Add 150 g (5 ounces) cream cheese and mix well

11. Add 0,5 dl (1/4 cup) chopped fresh parsley

12. Add 0,5 dl (1/4 cup) chopped fresh chive

13. Add 1/4 teaspoon salt

14. Add 1/4 teaspoon black pepper

15. Mix well

16. Cut off the stem at the base of the paprika

17. Cut the paprika in half lengthwise

18. Remove the seeds and core of the paprika

19. Cut the paprika into thin strips

20. Cut off the white membrane

21. Chop the paprika trips finely

22. Spread the chicken and cream cheese mash on crostini bread

23. Sprinkle the choped paprika over the crostini

Serve the crostini decorated with the parsley leaves
