TIPS

You can replace half of the water with coconut milk when boiling rice for a richer flavor. To do this, simply follow the same instructions for boiling rice, but replace half of the water with coconut milk

INGREDIENTS

4 chicken leg quarters

2 ripe bananas, sliced

1 dl (1/2 cup) cashews

1 onion, chopped

1 tablespoon red chili, chopped

1 chicken bouillon cube

4 dl (2 cups) coconut milk

1 tablespoon olive oil

1/2 tablespoon butter

3 teaspoons curry powder

2 teaspoons turmeric powder

2-3 teaspoons cumin

1-2 tablespoons lime juice

salt och peppar

RECIPE

1. Heat 1 tablespoon of oil and 1/2 tablespoon of butter in the fry pan over medium-high heat

2. Season the chicken leg quarters with salt and pepper on both sides.

3. Add the chicken to the pan and cook for 3-4 minutes per side, or until golden brown.

4. Reduce the heat to medium and cook for an additional 5-7 minutes per side, or until the chicken is cooked through.

5. Use a meat thermometer to check the internal temperature of the chicken. The chicken is cooked through when the internal temperature reaches 75° C (165° F)

 

6. Add the onion to the pan and cook for 3-4 minutes

7. Add 3 teaspoons curry powder

8. Add 2 teaspoons turmeric powder

9. Add 2-3 teaspoons cumin

10. Cook together for 2-3 min

11. Add 1 tablespoon red chili

12. Add 4 dl (2 cups) cocunut milk

13. Add 1 chicken bouillon cub and put the sauce to a boil and then lower the temperature to medium low

14. Add chicken leg quaters, cover with the lid and simmer for 10 min

15. Add 1 dl (1/2 cup) cashew nuts

16. Add 2 bananas, cover with the lid and simmer for 5 min

17. Turn off the heat and add 1-2 tablespoons lemon juice

Serve with fresh boiled rice
